Baby Spinach
Baby spinach is a spinach which is harvested before it is fully developed. It has a mild flavour and is good in hot dishes, for sauces and mixed salads.
Season: May-October

Feld Salat
Feld salad has a mild, slightly spicy, nutty flavor. That makes it good in salads, vegetable mixtures, in soups, for sauces or steamed.

Mizuna
A Japanese leaf vegetable, used as a salad. Mizuna has a piquant, mild peppery and is slightly spicy and has a sweet taste, making it suitable in mixed salads and wok dishes. In wok dishes it should be added just before serving.
Season: April-October

Rucola
The leaves on rucola salad are small, narrow and dark green with jagged edges. The flavour is very aromatic and spicy and can be characterized as mustard and nutty. Rucola can be included in a plethora of warm and cold dishes for example salads, pesto, soups and sauces. In addition, it may be used for decoration or marinating.

Red Mangold
Fledgling red beet leaves. They have a very mild taste of beetroot, with a slightly nutty aftertaste. They are ideal in salads and hot dishes, where the leaves should be turned in just before serving.
Season: May-October

Red Mustard
These leaves can be used in salads, wok dishes and as decoration.
Season: June-August

Spinach
A leaf vegetable, which can be smooth or wrinkled. It can be used steamed, stewed, sauteed, in pies, pasta dishes, soups or sauces. Good with nutmeg and lemon.
